From the honeycomb to the plate. Honey gastronomy
ENROLMENT: 3rd Autumn University of Ayora (3 November)

The Universitat de València, through the Office of the Vice-Principal for Culture and Society, the Ayora City Council, the Valencian Provincial Council and Caixa Popular, continue to create interesting synergies in order to consolidate the Seasonal Universities project, launching the third edition of the Autumn University of Ayora (UNAY), focused once again on the culture of honey.

Following the success of the previous editions in the midst of the pandemic, 2020 and 2021, we will be holding the third edition on 3 November 2022. If in the first edition we decided to deal with honey from a historical perspective and in the second we addressed the challenges of beekeeping today, in the third this precious product will be studied from the point of view of gastronomy, nutrition and health. To do this, we will bring together accomplished specialists in the field of Gastronomic Sciences, including a small practical activity as a closing session.

In short, the Autumn University of Ayora, a town famous for its beekeeping tradition and for the celebration of the First Honey Cut, will once again be a meeting and debate point for this product, reflecting the transversality and plurality of topics worked on by professionals and researchers from the Universitat de València, as well as the transfer of knowledge between the university and the territory.
