Biography

Eva María Mateo Jiménez holds a degree in Pharmacy from the University of Valencia (UV) (2006). She is currently an associate professor in the Department of Microbiology and Ecology at the Faculty of Medicine and Dentistry (UV). She has obtained various predoctoral and postdoctoral research grants and contracts, including FPI (MCI), APOST, BEST (Generalitat Valenciana), and two Juan de la Cierva contracts (JdC-Training and JdC-Incorporation) (MINECO). Furthermore, she completed her PhD at the University of Valencia, Cranfield University (UK), and the Complutense University of Madrid (UCM, Spain) as part of two multidisciplinary projects on mycology and mycotoxins, obtaining her international PhD with the highest distinction (cum laude) and the Extraordinary Doctorate Award from the UV. She has collaborated with internationally renowned research groups through various stays, including the groups "Applied Mycology" (Cranfield University, UK), "Molecular Techniques for the Detection and Identification of Fungi" (UCM, Spain), "Medical Immunology, Bacteriology, and Virology" (Health Research Institute INCLIVA, Spain), and "Immunology and Virology" (National Microbiology Center, Carlos III Health Institute, Madrid, Spain).

Her research has focused mainly on the physical and molecular characterization of fungi, the determination of mycotoxins using high-resolution analytical techniques, the optimization of antimicrobial formulations, the study of the in vivo toxicity of microbial toxins, the design of bioactive films and metallic nanoparticles with antimicrobial activity, the testing of cold plasma techniques for the control of microbial pathogens and their toxins, and the optimization of machine learning technologies for the prediction of resistance to antimicrobial treatments. She is the author of numerous articles published in JCR-indexed journals (mainly in D1 and Q1), book chapters, and contributions to national and international scientific conferences. She has participated in various international, national, regional, and institutional research projects. In addition, she has been a member of several national R&D networks of excellence and is co-founder of the Spanish Association of Mycotoxicology.

Her teaching work in microbiology has been carried out at the University of Valencia. He has been a lecturer in the undergraduate programs in Medicine, Dentistry, Optics and Optometry, Biology, Biochemistry, Biomedical Sciences, and Biotechnology, and has supervised several doctoral theses, master's theses, and undergraduate theses in the field of microbiology.
