CV summary. I am Professor of Microbiology in the Dept. of Microbiology and Ecology since 2012, member of the Institute of Biotechnology and Biomedicine since its creation as ERI BIOTECMED and director of the ENOLAB research group GIUV2014-197 of the University of Valencia (UV). I have participated in 47 competitive RID projects (3 international and 44 national) and 23 contracts with companies. I have been PI in 11 national and 1 international competitive projects and in 6 non-competitive. I have been director and deputy director of the UV Chair of Vine and Wine (2009-2011) of UV. I have participated in several initiatives to promote transfer to companies and, also, in the production of audiovisuals and dissemination books sponsored by the UV. I have accumulated 8 five-year teaching periods and 5 six-year research periods (the last one in 2018) and one transfer period (in 2018). I have supervised 10 PhD theses, 6 master's theses and numerous final degree theses. All the PhDs trained in my group hold civil servant positions in CSIC, INIA, Universities, secondary schools, or positions in R&D&I departments in national and international companies. The aim of my research focuses on the study of wine micro-organisms in order to improve fermentation processes, avoid unwanted biological processes and control wine quality. My work focuses on the study of taxonomic, genetic, metabolic, technological and ecological aspects of lactic acid bacteria (LAB). The results obtained have been translated into 100 publications with relevant contributions to basic and applied science. I have pioneered the use of molecular methods to identify microorganisms at different taxonomic levels. I have expanded taxonomic knowledge by describing 6 new species: 5 of LAB and 1 of acetic acid bacteria. I have also explored the metabolic and genetic diversity existing in the strains of the species Oenococcus oeni (main responsible for malolactic fermentation-MLF). I have also studied the dynamics of LAB and yeast populations and developed methods to determine the success or failure of inoculations at the industrial level. I have pioneered the study of the bacterial genome and the development of tools to introduce genetic information into O. oeni, which until now has been recalcitrant to transformation. By 1980s I contributed to highlighting the importance of oenological microbiology. My descriptive works on the wine microbiota were among the first Spanish works to be published in international journals. I have made numerous contributions related to malolactic fermentation (FML), a fundamental process in the production of red wines. I have worked on optimising O. oeni biomass production and determining the influence of preservation systems on its viability, that are of interest to the starter culture production industries. I have also developed alternative systems to carry out MLF in order to increase the success rate of this process, which is of great importance for wineries. I have studied the metabolism of sugars and amino acids by LAB and the production of aromatic compounds by malolactic strains because of their impact on the final composition of the wine and on the appropriate selection of these bacteria. One of the negative aspects of the metabolism of some strains is the generation of biogenic amines (BA), which are toxic for the consumer. I have determined which microorganisms in wine are the main responsibles and the factors that influence their production, and I have developed mechanisms to reduce their presence in wines. I have also participated in studies to eliminate ochratoxin A (another toxin found in wines). This work has contributed to determine the dangerousness of the different oenological microorganisms and has highlighted an important problem in relation to the healthiness of wines. I have pioneered the use of LAB to achieve acidification (bioacidification) of low-acid musts caused by climate change. The results that have been transferred to society include the transfer of malolactic cultures to the companies Lallemand and Agrovin, marketed as LALVIN VP41TM and Viniferm OE 104. Also the selection of a bioacidifying culture for the company Lallemand, and of a strain of O. oeni capable of reducing biogenic amines for the companies Agrovin and bodega Carraovejas. For the company Ecovitis, we have selected three organic yeasts. We have obtained two patents, one national and one international, which describe a system for immobilising S. cerevisiae and O. oeni to carry out alcoholic fermentation and MLF simultaneously..

Igualmente he participado en la ejecución de 25 convenios de investigación con empresas, siendo la investigadora principal en 7 de ellos. He publicado 69 artículos de investigación en revistas indexadas en SCI, 2 en revistas indexadas en Current Contents y 25 en revistas nacionales e internacionales de amplia difusión en el ámbito enológico (Infowine-online, ACE-Enología, Enólogos, Tecnología del vino, La semana vitivinícola y Alimentaria). He publicado 12 capítulos de libros editados por editoras internacionales. Soy autora de varias publicaciones y documentales de divulgación de temas relacionados con la Microbiología enológica. En el 52% de las publicaciones aparezco como primera o última firmante. He presentado 274 ponencias a congresos nacionales e internacionales de Microbiología, Enología, Biotecnología y Microbiología Industrial, varias de ellas por invitación. Pertenezco al Instituto BIOTECMED de la Universidad de Valencia desde su creación como Estructura de Recerca Interdisciplinar (ERI- BIOTRCMED). Soy miembro de las redes de investigación: 'Bacterias lácticas en la salud humana y calidad alimentaria', 'Participación de las bacterias lácticas en la salud humana y calidad alimentaria', 'Red Española de Seguridad Alimentaria Ministerio de Ciencia y Tecnología', 'Grupos de Investigación en Enología-GIENOL' y 'Red de Investigación Agroalimed'. Dirijo el grupo de investigación Laboratorio de Microbiología y Biotecnología Enológicas (ENOLAB-GIUV2014-197) de la Universidad de Valencia. Mi investigación comprende aspectos básicos y aplicados de los microorganismos del vino En el campo de la Taxonomía, he descrito 5 nuevas especies de bacterias lácticas, en el de la Genética, he conseguido introducir material genético exógeno por primera en O. oeni por conjugación de plásmidos y transposones, en el de la Proteómica, he descrito por primera vez la implicación de enzimas lacasa de bacterias lácticas en la degradación de aminas biógenas y he llevado a cabo los primeros estudios estructurares de lacasas de bacterias lácticas. Respecto a la ciencia aplicada ha llevado a cabo diversos programas de selección de cepas con varios objetivos: mejora organoléptica, fermentación maloláctica, acidificación biológica, reducción toxinas en el vino, sistemas paliataivos de las consecuencias del cambio climático, etc. Varios de estos resultados de investigación conseguidos por el grupo ENOLAB se han transferido al sector productivo (cultivos malolácticos: LALVIN VP41TM comercializado por la empresa Lallemand y Viniferm OE 104 comercializado por la empresa Agrovin y otros en fase de evaluación industrial). Soy autora de dos patentes una nacional (Ref. P201531943) y otra europea (Ref. WO/2017/114999 ) sobre un método de inmovilización de levaduras y/o bacterias lácticas en chips de roble para realizar la fermentación alcohólica y/o maloláctica.
