José Miguel Soriano is the author of the book “El gran libro de la horchata y la chufa de Valencia” (The great book of horchata and chufa of Valencia), winner of the Gourmand World Cookbook Awards.

The interview approaches questions such as the emblematic nature of chufa for the Valencian history, the current situation of the production of horchata and the increasing and necessary visibility of this product in the national and international markets.

José Miguel Soriano speaks about a promising future where, both the seasonality problems -which are disappearing bit by bit- and agriculturists’ lack of protection surpassed, the horchata, specially the Valencian one, will extend to the Spanish and foreign markets.
