Ayora Seasonal University. The culture of honey: past, present and future

The Universitat de València, through the Vice-Rectorate for Territorial Projection and Society, the Ayora Town Council, the Diputación de Valencia, Caixa Popular and the Agencia Valenciana Antifraude (Valencian Antifraud Agency), are once again creating synergies, this time to consolidate the seasonal university project and bring out the first edition of the Universidad de Invierno de Ayora (Ayora Winter University), which focuses on the culture of honey.

Honey has always been a fundamental resource in the economy and food of human societies. The well-known paintings in the Araña de Bicorp Cave (Valencia) show us how it was already used in the prehistory.

At the Winter University of Ayora, a famous town for its beekeeper tradition and for the celebration of the Primer Corte de la Miel (first honey cut), the origin and historical evolution of beekeeping will be analysed, paying special attention to the Valencian territory. Likewise, the current panorama of the sector will be discussed and the challenges of the future will be reflected upon.
