Csirke paprikás (Paprika chicken).

Hungarian recipe given to me by Peter Bardos.

INGREDIENTS:

  • 3 lb. chicken bits
  • 6 small or 2 large onions
  • 1 large green pepper
  • 3 tomatoes or tomato puree
  • 1 tablespoon paprika
  • Soured cream, oil, salt
METHOD:
Fry the finely chopped onions till golden brown in hot oil, take the pan off the heat and mix in a tablespoon of paprika. (Do not let the paprika burn - it becomes bitter)
Return to a low heat, add the meat, salt to taste, and stew slowly, stirring occasionally. A little water may be added if necessary.
When the meat is half done, add the chopped tomatoes (or tomato puree), and the sliced green pepper.
Stew till the meat is tender.
Serve with spaghetti twists and dill gherkins, and a dollop of soured cream on the chicken.
