Samosas.

Delicious Indian snacks, great packed lunch or picnic food.

INGREDIENTS:

  • Starter pork recipe.
  • 1-2 tablespoons curry paste (remember you have chilli already in starter mixture).
  • 3 tablespoons natural yoghurt.
  • Juice of 1/2 lemon.
  • 1-2 tablespoons chopped coriander or mint.
  • 1 pack of fillo pastry.
  • Sesame seeds (optional).
METHOD:
Stir the curry paste, yoghurt, lemon juice and coriander or mint into the starter recipe.
Taste for seasoning.
Allow the mixture to get cold.
Heat the oven, gas mark 6 / 200°C / 400°F.
Cut the fillo into strips, 8cm / 3" wide x 23cm / 9" long.
Spoon on the filling (as per diagram) and fold over the triangles.
Brush with a little oil and sprinkle with sesame seeds (optional).
Bake in the pre-set oven for 10 minutes.
Serve with a mixed leaves salad and a bowl of Greek-style natural yoghurt flavoured with chopped chilli and crushed black pepper.



STARTER PORK RECIPE:

Serves 4
  • 450g / 1 lb. lean pork mince.
  • 1 onion, finely chopped.
  • 2-3 cloves garlic, chopped.
  • 1 chilli, chopped (plus seed if you like it hot!).
  • 1 dessert spoon fresh ginger, grated.
  • 1 red pepper, chopped.
  • Juice of 1 lime (optional).
  • Salt and pepper.
Heat a non-stick pan, brown the pork well. Stir in the onion, garlic, chilli, ginger, red ppper and lime juice, season well. Cook for 8-10 minutes - set aside.
