Mexican Tortillas with celery and pepper salsa.
INGREDIENTS: Serves 4.
- Starter pork recipe.
- 1 can of chopped tomato.
- 1 pack of pack of soft flour tortillas.
Celery and pepper salsa:
- 2 sticks of celery, finely chopped.
- 1 red pepper chopped.
- 2 tablespoons oil.
- 1 clove garlic, chopped.
- Juice of ½ lemon.
- Salt and pepper.
- 1-2 tablespoons coriander, chopped (optional).
METHOD:
Mix all the ingredients of the salsa toghether.
Heat the tortillas on by one on a large non-stick pan.
Fill with the pork mixture.
Serve with the salsa, some soured cream and mixed salad leaves.
STARTER PORK RECIPE:
Serves 4
- 450g / 1 lb. lean pork mince.
- 1 onion, finely chopped.
- 2-3 cloves garlic, chopped.
- 1 chilli, chopped (plus seed if you like it hot!).
- 1 dessert spoon fresh ginger, grated.
- 1 red pepper, chopped.
- Juice of 1 lime (optional).
- Salt and pepper.
Heat a non-stick pan, brown the pork well.
Stir in the onion, garlic, chilli, ginger, red ppper and lime juice, season well.
Cook for 8-10 minutes - set aside.
