My connection with the University of Valencia began with my studies in the Biotechnology Degree. During these years I discovered my interest in research, especially in the food and industrial sector. As a result, I started the Master's Degree in R&D in Biotechnology and Biomedicine (UV) to continue my training and enter the world of research. During this period of time I developed my Master's Final Project at the Institute of Integrative Systems Biology (I2SysBio), focused on the study of the redox regulation of metabolism in wine yeasts. Upon completion, I started my PhD studies at I2SysBio, specifically in the Industrial Yeast Biotechnology group, thanks to the initial award of a predoctoral contract (ACIF20) from the Generalitat Valenciana and the subsequent award of a predoctoral contract Atracció de Talents 2020 from the University of Valencia. The main objective of this doctoral thesis is to study the regulation of different redox proteins in wine yeasts, analysing what impact they have on the metabolism of these microorganisms in the different stages of their industrial use. This could lead to the selection and improvement of both oenological yeasts and their growth conditions, enabling their transfer to industry.
