The RiskTox Group, together with the Food Safety Section of AETOX, organised the X Food Safety Conference at the Faculty of Pharmacy and Food Sciences of the University of Valencia on Tuesday 13th March.
At the conference, Dr Marta Mesías, Senior Scientist at the Institute of Food Science and Technology and Nutrition (ICTAN-CSIC), gave a presentation on 'Acrylamide in processed foods: risks, regulation and mitigation strategies in food safety'.
The conference also included an interesting session of oral presentations and posters with the participation of professors from different universities (University of Alcala, Autonomous University of Barcelona, University of Barcelona and University of Valencia) and institutions (IATA/CSIC), masters and doctoral students. The day was an excellent opportunity to generate an enriching dialogue and reflection on the challenges and solutions in food safety.
