
The director of the Chair for New Green Transition at the Universitat de València, Aurora Pedro, participated from June 5th to 11th in a study trip to Crete (Greece) shared with a group of university students from the University of Wisconsin (USA), with the aim of learning about Greece's experience in the field of gastronomy and sustainability, a case of special interest in the Mediterranean context.
The Chair has proposed to develop a project within this initiative of Crete's Culinary Sanctuaries.
Throughout this study tour, students met with more than 20 resident specialists and participated in presentations and guided tours of archaeological and historical sites; nature reserves, organic farms and vineyards; traditional villages and artisanal food production facilities and taverns. They also took part in a number of distinctly different cooking demonstrations or classes using fresh, local and organic ingredients.
