The seminar will address the functional role of food-associated lactic acid bacteria and their applications as multifunctional starter cultures, with particular emphasis on the challenges of innovation and sustainability in the food industry and the development of healthier products.
Dr. Roberta Prete has completed her PhD in 2018 achieving the title of PhD Europaeus in Food Science with a project entitled “Food-associated Lactobacillus plantarum: an insight into functionality” at the University of Teramo, where she conducted also postdoctoral studies in food microbiology, with particular interest on fermented foods and probiotics (mainly lactic acid bacteria) and their impact on the host. Currently, she is a Tenure-track Assistant Professor at the University of Teramo, actively involved in teaching activities and in diverse research projects, including two Research Programme of National Interest (PRIN) and three National Recovery Resilience Plan (NRRP) projects funded by the European Union - NextGenerationEU, under the Italian Ministry of University and Research (MUR) and Italian Ministry of Health (MSAL). She has published 33 papers in scientific journals, 3 book chapters and more than 60 proceedings to international/national conferences.
