Brief description of the contents

  • Study of the main microbial groups related to food and study of different classification methods related to them.
  • Physiological basis and biochemical basis of microbial metabolism to optimise the production of fermented food.
  • Basis and applications of biological and biotechnological techniques like detection systems of pathogenic microorganisms in the field of food safety and quality control.
  • Study and assessment of the statistical methods most frequently used for the analysis and interpretation of data.
  • Good working practices in the laboratory and basic safety rules.
  • Study of the peculiarities of the various ingredients, raw materials and food additives.
  • Fundamental basis of technological processes for the preservation and food processing.
  • Basis of conservation emerging technologies for application in the food industry.
  • Study of the properties of food packaging and its role in food technology.
  • New food: functional and transgenic food.

1. Basic knowledge of the main microbial groups associated with food and becoming familiar with the methods of microbial classification.
2. Capacity for the implementation of the main biological and biotechnological techniques for microorganism detection and interpretation of the results.
3. To manage statistical methodology and how to analyse problems and apply appropriate statistical tools in each case.
4. Knowledge of the methods used in the conservation and food processing as well as emerging and packaging technologies.
5. Knowledge of the characteristics of new foods, functional and transgenic food and their impact on both the quality of food and the health of the consumer.

Evaluation System
The training activities of learning of knowledge, skills and abilities will be made in the form of continuous assessment throughout the academic year.
The assimilation of knowledge and understanding of the theoretical set in the module will be assessed through written/oral tests.
