The involvement of eminent experts from the University of León in the Master's in Food Quality and Safety has significantly enhanced the programme's academic and scientific standing. In this context, Dr Rafael Balaña Fouce delivered a lecture entitled "Carcinogenic substances in food. Methods for determining carcinogenicity", in which he rigorously addressed the main potentially carcinogenic compounds present in food, as well as the most advanced methodologies used for their assessment and control.

In his presentation, Dr. Carlos García Estrada delivered a lecture entitled "PAHs in food and toxicological risk." The focus of this presentation was on the presence of PAHs in various food products, and the risks associated with their ingestion. The presentation provided a comprehensive overview of the toxicological mechanisms of these compounds, along with the available strategies for minimizing their impact on public health.

It is evident that both sessions generated a high level of interest among the students, a fact that can be attributed to their topicality, applied approach and relevance to the field of food safety.
