The fusion of traditional and vanguard cuisine, and the elaboration of craft beer have a leading role in the Alumni UV Gastronomic Club in November

Alumni UV proposes, in November, six new activities. The second edition of the Gastronomic Club will be the 18, this time, about innovative fusions and craft elaborations; there will also be free activities with the Reading Club and the Alumni Comparteix; as well as the strolls in the centre of València and the trips around the territory.

The second proposal of the Gastronomic Club, organised by Alumni UV and Valencia Club Cocina, is about a vanguard cuisine from the contrast of a traditional product and a new one. “This way, we will get results that maintain the most fresh and traditional flavours with some techniques and flavours from the ‘nouvelle cuisine’, always available to our kitchens’, state the members of Valencia Club Cocina.  

This time, each gastronomic proposal will be paired with craft beer. “We will see how this tasty, fresh ‘broth’, more and better crafted each time, can combine in perfect harmony with the proposal”, affirm the experts.

With this aim, Yeray Forés, Chef of the Valencia Club Cocina, and Antonio Puchades, Valencian creator of the craft beer ‘Valentium’ and one of the most emerging master craftsman, who, in this session, will be in charge of showing how craft beer is elaborated and its qualities to intimately match with each serving, will combine their knowledge. “Pairing is considered the art of combining food and drinks in a way that the adequate union between both products gets to awaken a new experience for our sense of taste”, they add.  

The gastronomic proposal for November includes three courses: the first one consists on an egg at low temperature with migas, trotters broth, yeast and chickpeas; the second one is sea bass on top of a venere rice and chlorophyll ‘risotto’; and an exquisite ‘coulant’ dessert of chocolate, pistachio cream and cocoa petit fours.

Free activities, strolls around València and trips around the tterritory

Alumni UV will come back in November with the usual cycles. In the activities section there are the Book Club (3 November), which will analyse Dennis Lehane’s novel ‘Mystic River’; and Alumni Comparteix (25 and 28 November), with a talk about the depopulation of the Valencian interior territories and a trip to Puebla de San Miguel, in the Rincón de Ademúz.

On the other side, with the collaboration of the Travel Club Fil-per-Randa, the collective of the Universitat de València has organised a museum tour (15 November), which includes the IVAM, the Benlliure Museum-Home and the Museum of Fine Arts, to reach a deep understanding of the Valencian impressionists, artists from the change of century; and two trips around the territory: one to the Sierra de Espadán to visit the cliff and the Fuente de Almanzor (22November) and another to the Sierra de Gúdar-Javalambre, Teruel (19 November), to go for a walk by the Arcos river and around the city that gives the river its name, Arcos de las Salinas.
