
The Universitat de València was the winner in Spain of the prestigious Gourmand World Cookbook Awards, considered the Oscars of Gastronomy, in the category Best Non Alcoholic Book, for ‘El gran libro de la horchata y de la chufa de Valencia’. The book is directed and coordinated by Professor José Miguel Soriano del Castillo.
‘El gran libro de la horchata y de la chufa de Valencia’ will size with the winners, of the same category, from 64 countries around the world, in the competition ‘Gourmand Best in the World’ to achieve the international prize. The final result of the competition will be announced on 28 May 2016 in the annual gala that will take place in Yantai (China).
The book is part of the Col·lecció Clíniques of the Universitat de València, directed by José Manuel Almerich, and its edition has been possible thanks to the Lluís Alcanyís Foundation, the Universitat de València, the Regulating Board of the Denomination of Origin Chufa de Valencia and the Valencian Government. The making of this book has had the participation of researchers from the Universitat de València, University Clinic of Nutrition, Physical Activity and Physiotherapy (CUNAFF) of the Lluís Alcanyís Foundation, Mixed Research Unit on Endocrinology, Nutrition and Clinical Dietetics of the Universitat de València-Institute of Health Research “La Fe” and Universitat Politècnica de València. The pictures have been taken by Pedro Galisteo, Jesús Cerezo and David Palau, among others, as well as counting with the photographic library of the Regulating Board, Lluís Alcanyís, Biblioteca Valenciana and Historical Library of the Universitat de València.
Alongside the edition of this book, the Universitat de València is working, inside the Gastrolab of the Institute of Material Science, in the design of new products using ‘chufa’ with the aim of improving the competitiveness of Valencian industry facing the entry of ‘chufa’ from other countries, apart from the study of the different healthy properties of this product and of horchata inside the Food&HealthLab, the Living Lab of the Universitat de València promoted by the VLC/CAMPUS International Campus of Excellence.
This work will help the training of the students of the Degree in Gastronomic Sciences of the Universitat de València and will support this degree, so that its students can be ambassadors of the products from the Valencian Country when they finish their studies on the gastronomic, cooking and health aspects.
