Description of research activity:

Throughout its history, the research group has addressed various aspects: - Study of the volatile fraction of wines. - Enzymology of fermentation processes. - Fungi and mycotoxins in food. - Soil microorganisms that produce substances with antibiotic activity.

Scientific-technical goals:
  • Use of yeasts as a source of enzymes for use in the food industry.
  • Determine the optimal conditions for using the enzymes obtained in the previous step.
  • Development of microbial cultures for the biological control of fungal infections in agricultural soils.
