By Dr José Miguel Mulet Salort, researcher of the IBMCP, UPV. Author of the book Comer sin miedo (Eating without fear) Eating is a basic need. We invest hours of our lives sitting around a table and there we celebrate the most important events. Food besides being a simple act of food ingestion is also a cultural expression, a social event and often a demonstration of status, ideology or religious beliefs. Nowadays, paradoxically the books and programs which more interest arouse are those on recipes and slimming diets, which is like being addicted to both cocaine and Valium. This interest and wealth of information facilitates the circulation of statements which are not actually true, urban myths or falsehoods and especially a lot of fear: was it better the food in the past?, is it healthier eating natural or ecological products?, are we eating a lot of chemistry?, does additives poison us?, does it exist wonder diets or miracle pills for loosing weight?, is it true that there is an enzyme which cures all?, how the food of the future will be?
